Oh Colorado, it was Wonderful to meet you!
A few weeks ago we went on our second ski trip, but this was the first in the renowned state of Colorado. Snow Shoe, VA didn’t compare to the vast Rockies that lay before us. Our goal was to make it off the bunny slopes onto the greens, and I am proud to say we did just that. Now whether we achieved it gracefully or via a wobble, out of control speed and subsequent tumble, is for us to know. The point is, we left you bunnies, and found happiness (and hurt) in the greens.

Oatmeal Cookies

Ingredients:
1 ½ cup brown sugar, firmly packed
1 ½ cup all-purpose flour
1 ½ cup butter, softened
3 cups old-fashioned oatmeal (not instant)
½ tablespoon baking soda
Preheat the oven to 350°, then mix all the ingredients in a large bowl. A hand mixer will suffice but you may have to get in there with your actual hands and do some mixing. The butter in this recipe is your “cookie glue,” so make sure it’s mixed in well. Form the mixture into small soft balls and place on a greased cookie sheet. Cook for 15 minutes. Let the cookies rest for a few minutes, and then brace yourself for the most perfect oatmeal cookie ever. Makes about 24 cookies.
Tips: Be creative and add in raisins or chocolate chips.
